Premium Ingredients, who specialise in the formulation and blending of food powder products, has developed a new range of stabilisers and texturisers for cheese slices.

According to the company, the new stabilisers for IWS (Individually Wrapped Slices) and SOS (Slices on Slices) allow for cost reduction thanks to dry matter and protein content reduction.

The Premitex ingredients developed for individually wrapped cheese slices (IWS) are mainly based on modified starch and hydrocolloids, allowing cost reduction thanks to dry matter and protein content reduction (products with 13%, 11%, 7% and 4% of protein content).

The new stabilisers are said to allow drastic cost reduction of cheese slices without altering their fundamental properties such as processing, optimal separation of the plastic foil, flexibility and remelting.

The range of products for cheese slices SOS (Slices on Slices) is composed of ingredients mainly based on starches and hydrocolloids. As in the case of products for IWS, these stabilisers are also claimed to be highly profitable solutions thanks to dry matter and protein content reduction (products with 18%, 9% and 5% of protein content).

As for the final product, Premium Ingredients says that these ingredients provide better elasticity, firmness and separation of the slices, producing a sliced cheese of excellent quality at an optimum price.
