agarOLES® Series is pure agar-agar powder that has undergone thermal reprocessing. It has the ability to dissolve completely at 85˚c to form a smoothly spreadable, dense gel-sol upon cooling. Ideal for preparations of single-serving, instant ready-to-eat products with high fiber content. Applications: mayonnaise, sauces, salad dressings, dipping sauces, ketchup, custards, pie fillings and crème chantilly, cake glaze, crème brûlée, flans and panna cotta, condensed milk, set yogurt, stirred yogurt and greek-style yogurt, ready-to-drink beverages, fruit-based soft drinks.
