Products from the BINDER series are functional formulations based on sodium alginate and calcium sulphate to give structure, improve texture and overall appearance to a variety of food products. Among different benefits that it has, we can highlight: great water retention capacity, universal binding (binds fats, proteins and other food products), helps to obtain structured and thermo-irreversible products, which may be cut or
diced in any manner, frozen or cooked without loosing shape
nor texture. At BDF we have developed new specialized versions – BINDER EM F and BINDER HB F solutions, designed
specifically to impart texture and provide adhesion to Vegan products. They rely on different fava bean and pea fractions
and sodium alginate as active ingredients. Apart from binding and emulsifying properties these formulations are a source of vegetable protein and dietary fibre and can be used in all
kind of vegan and vegetarian products such as cold cuts, frankfurters, meat balls and nuggets.
