Caramelized nuts and nougatine

D' Orsogna Dolciaria has a dried fruit caramelising department for creation of small nougat granules, caramelized sugar and sugar coated nuts and almonds. Other than granules of different sizes, its range also includes caramelised natural sugar, biscuits and meringues. It has chosen for allergy reason to avoid decorations with peanuts and to be vigilant about the possibility of cross contamination by peanuts from their bigger suppliers and so insist on their absence.
