With growing consumer demand for clean label and fewer additives, deZaan has launched TRUEDARK powder. Created using what the company describes as unique proprietary technology, TRUEDARK is said to be the first dark natural (i.e non-alkalised) cocoa powder that mimics the enhanced colour and flavour intensities of alkalised cocoa powders.
While traditional natural cocoa powder’s light brown colour and mild cocoa flavour make it less suitable for many recipes, deZaan says that TRUEDARK powder provides strong cocoa taste and a rich brown colour. These characteristics, it believes, allow food manufacturers to meet clean label trends by presenting familiar and identifiable ingredients with the ability to label in the United States TRUEDARK as cocoa, rather than cocoa processed with alkali.
Additionally, the company claims that TRUEDARK allows new products to be created without compromising taste, colour, performance or quality by delivering rich cocoa taste and bold brown colour naturally.
