Glucomannan is a natural, water-soluble dietary fiber extracted from the roots of the elephant yam, also known as konjac. This species has long been used in China, Japan and Southeast Asia as a food source. Flour extracted from the corm of this species is used in Far Eastern cuisine to make noodles, tofu and snacks.

Over the past two decades, purified konjac flour, commonly known as konjac glucomannan, has been introduced on a relatively small scale into the United States and Europe. It is one of the most viscous dietary fibers known.
