Lecithin is a generic
term to designate any group of yellow-brownish fatty substances occurring in
plant tissues composed of phospholipids (phosphatidylcholine,
phosphatidylethanolamine, phosphatidylserine and phosphatidylinositol). Lecithin is extracted from
readily available sources such as soybean, sunflower and rapeseed. It has low
solubility in water and is widely used in food, feed, nutritional supplements,
pharmaceutical and technical applications as an emulsifier, stabilizer,
moisturizing agent, mild preservative, release agent, viscosity modifier,
wetting agent, mixing aid, an anti-dusting agent.Deoiled (powder or granular) lecithin is obtained by removing oil and fatty acids (35-38%) to produce a highly concentrated or pure lecithin with phospholipids being at 95-98%. Powder lecithin is used and dairy, infant formulas, functional and sport foods, phamaceutical applications, pet food, aquacultre (shrimp) and anmial feeds.
