The dried apple peels are gently treated and milled to different particle sizes. The powder contains a lot of dietary fiber, which promotes digestive health. Another important functional benefit is its water binding capacity, which helps in controlling the moisture content in baking flour mixes & meat alternatives. Apple fiber is one of the major ingredients in gluten free bakery products and can help in increasing the daily intake of fiber without increasing many calories. Hence apple fiber can be used in calorie reduced products. In contrast to other fibers such as cellulose, pectin, starch, gum arabic which have an E-number, apple fiber is a completely natural ingredient. Without E-number, it can be used for a clean label positioning.
