It is produced by natural fermentation with böcker mailänder predough. Salt and natural vinegar are added to the predough starter to prevent spoilage. It has natural vinegar which gives additional taste and also acts as a natural baking ingredient. Its extraordinary yet traditional fermentation process gives extra flavour and has been in use since ancient Greek and Roman times. The resulting dough is dry and well suited for industrial processing. Its dough pieces have a high proofing tolerance. Characteristic features of the final baked goods are long lasting crispiness, freshness, juicyness and a pleasing mild, wheaty flavour. It is added 5 to 10 % calculated to flour. It is highly economical and very efficient in use. It is ideally suited for all wheat-based bakery products even for pastries. It contains ingredients such as water, wheat flour, natural vinegar, salt, starter cultures. It is not heat-treated.
