Then carefully processed and dried to guarantee the microbiological safety while keeping the best functionality. The product is treated to improve the emulsifying characteristics, and to produce heat-resistant mayonnaise. Different varieties in composition are available. Heat stable egg yolk powder is the long shelf life, ambient alternative for heat stable egg yolk with salt in products like mayonnaise, sauces but also in ready mixes for the food industry.
