process of nixtamalization to ensure perfect tortilla chips with low fat uptake
and minimum breakage
- in this product, a hydrothermal process step achieves a pre-gelatinization of the starch and changes the functional properties of the product
- made from the best flint maize varieties, produced in regional and sustainable contract farming in Southwest Germany or Alsace, France
- the product can be kneaded by adding liquid to form a stable and machine-usable dough that can be further processed on fully automated equipment
