Paprika oleoresin , also known as paprika extract or oleoresin paprika.
Paprika Oleoresin is a reddish brown oily color that is extracted from lipids and pigments from the pods of the Capsicum Annuum or Capsicum Frutescens, which is a red pepper growing in moderate climates.
The oleoresin is a viscous, highly colored substance containing xanthophylis, capsanthin, and capsorubin (the red component) and beta-carotene (the yellow component).The red pigments can be as high as 40-50% of the oleoresin.
POIL oleoresin is standardized with vegetable oil to a color strength referred to as 10,000 and 100,000 CU (for "Color Units").
