PLA2 NAGASE is a pure, microbial phospholipase A2 with functionality for phospholipid hydrolysis. PLA2 NAGASE is stable in a wide range of pH and is easily inactivated during mid heat processing. PLA2 Nagase can be used in a variety of applications, including for emulsions (sauces and dressings), baked goods (cakes and breads), and hydrolyzed lecithin production (soybean, sunflower, or rapeseed).
