Carob gum is a non-digestible galactomannan polysaccharide obtained from the ground endosperm seeds of the carob tree (Ceratonia Siliqua).It acts as a thickener without providing additional calories and does not change the flavor of the product to which it is added.Carob bean gum is mainly used as a thickener, stabilizer, emulsifier and gelling agent.The main applications include ice-cream production, dairy products, sausages, bakery products, preparation of various types of sauces, confectionary industry and canned food.
