Protein fraction of yellow peas with a very high solubility. The raw  material, yellow field peas, is not genetically modified. This protein isolate has  excellent  functionality  for emulsification, as well as water and fat binding properties, foaming characteristics and gel-forming   properties, it offers a good amino acid profile, which  is complementary to wheat  flour  and  other  cereal  foods and is absent in gluten, lactose, cholesteroland anti-nutritional factors.
