Pea starch obtained by the milling of yellow peas and fermentation process (Pisum sativum). Thanks to the high water binding capacity that improves the structure of the finished product and due to its excellent gelling, stabilizing properties and high viscosity, it can be suitable in a  wide range of applications, including preparations of fillings, sauces and dressing, confectionery products and bakery products.
