Product description
The application of carrageenan in the food industry is
mainly manifested in three aspects: gel, thickening and protein reactivity.
Carrageenan can be used as a good coagulant in the production of jelly, and the
jelly made is elastic and non-hydrophobic. The application of carrageenan in
soft candy can make soft fruit fragrant, moderate sweetness, refreshing and
non-stick to teeth, and its transparency is better than AGAR, and meanwhile, the
price is lower than AGAR. In meat production, Carrageenan is used in meat
products to enhance and provide benefits for moisture retention, flavor,
texture, cutting, freezing and melting, and stability. The product has the
properties of fine, good slice, good taste, good elasticity, moderate toughness
and crisp, tender and smooth mouth, etc., thus improving product quality and
reducing cost. In ice cream making, it can distribute fat and other solid
components evenly, prevent milk components from separating and ice crystals
from increasing during manufacturing and storage, making ice cream delicate
organization, smooth structure and deliciousness. Carrageenan can be used as an
effective wort clarifying agent in beer production, so that the wort can obtain
a good clear appearance, which is conducive to yeast growth and improve the
biological stability of beer.
