Cassia Gum in LB-COL Hydrocolloids belong to botanical family Leguminosae and species Cassia obtusifolia. They consist of mainly galactose and mannose units and are termed as Galactomannan. Dispersible in cold and hot both, it achieves complete hydration once heated in aqueous medium above 80°C. Its hydration may be different with different salt contents in system.
