Curdlan gum is a new polymer produced by the microbial fermentation of sugar raw materials, specifically by the bacteria Agrobacterium sp. IFO 13140 (formerly Alcaligenes faecalis var. myxogenes).Curdlan gum has the unique property of forming elastic gels upon heating in aqueous suspension.It is considered a dietary fiber with gelation properties.
The production process involves mixing the sugar raw materials with the bacteria, allowing for fermentation, and then isolating and drying the curdlan gum.
Curdlan gum has numerous applications as a gelling agent in the food, construction, and pharmaceutical industries.It has been approved as a food additive by the U.S.
Food and Drug Administration.Its use is being evaluated in fat replacement studies in foodstuffs.
