Product description

Our de-heated (deactivated) mustard flour is flour milled from Sinapis Alba mustard seeds, in which the enzyme myrosinase has been deactivated through a steaming process, which also preserves their fixed oil. This product is widely used in the food industry , for example , in processed meat products it emulsifies fat, binds water and fat ( reduces cooking loss), increases peelability of sausages, reduces lipid oxidation of products- thus preserving flavour, replaces milk protein ingredients and reduces production costs. Other uses: in baked foods, sauces and processed cheeses. Application: the product is widely used in the food industry as an emulsifier, a binder, oil & water absorbent, flavour enhancer, thickener and an antioxidant & antimicrobial agent.Shelf life: 24 months
