Egg Yolk Powder
Product description
General information: Egg yolk powder is made of spray dried pasteurized egg yolks. It
is rich in lecithin and a good emulsifier. Dried egg yolks can be stored
at room temperature as long as they are kept cool and dry. Once opened,
egg yolks should be stored in the refrigerator. Reconstituted egg yolks
should be used immediately or refrigerated and used that day. To
reconstitute mix 1 tsp of powder with 2 tsp of water for 1 egg yolk. Use in recipes requiring emulsification properties of egg yolk. It
can be used in mayonnaise, ice cream, sauces and custards. It
can also be used as a thickening in sweet or savoury sauces.

Storage and transport conditions: Storage and transport dry between 15 and 25 °C. Do not refrigerate!
Shelf life: 24 months after production when kept at 15 to 25 °C in unopened packaging.
