It is harvested during the dry season between november and april. It is a raw material that has been tried and tested since ancient times for use in foodstuffs and many other different purposes. It is 100% natural and GMO free. It is particularly sustainable, as the trees from which it is harvested play a vital role in halting the expansion of the sahara desert. It is a natural multitalent. It is unique among the natural hydrocolloids, being up to 50% soluble in water as a result of its low viscosity. It is taste- and odourless. It can be used as an ingredient as well as an additive. It is a water soluble fibre. Applications: beverages, confectionary and flavors.
