Nu-BAKE is a patented hypoallergenic (gluten-free) extract from rice bran that delivers functionality. This ingredient provides emulsification and texture enhancement due to the interactions of its glycolipids, proteins, starches and pentosans. Gluten-free bakers like the enhancements on texture, mouthfeel and moisture retention. It reduces water migration / freezer burn, oil uptake in fried products and improves microwaveability (uniform heating).
