Recent global events and high stress have increased the consumer demand for both comfort foods and better-for-you choices. Catering to these demands, Mediterranean Umami Bold from Salt of the Earth Ltd. has introduced an all-natural solution to reduce salt and maximise umami flavour in popular comfort foods such as pizza and soup.

According to Datassential, pizza sales in the US more than doubled in 2020 and over the next five years , Statista predicts a similar increase to the $16 billion global frozen pizza market. The soup market has also experienced like growth and will continue to increase at a steady CAGR of 5% over the coming years, MarketWatch found.

“Consumers are working from home and do not enjoy active social lifestyles as before, so eating at home and turning to comfort food have become the new normal,” said Tali Feingold, Business Unit Director of Salt of the Earth.

“Yet these same consumers are more conscious about what they put in their bodies and study labels to ensure ingredients are all-natural, without additives.”

Mediterranean Umami Bold reduces sodium and artificial additives allowing food manufacturers to create cleaner-label, flavorsome products. It is a versatile ingredient with multiple uses and is also plant-based, vegan, kosher, halal.

The product is generally added to the aqueous phase of production and is heat and PH stable, so functions across various processing conditions. Its most common uses are in meats and fish, plant-based meat alternatives, soups, sauces and more.
