Enzymatic Hydrolysis for the Production of Collagen Peptides
The process of hydrolysis influences not just the dimensions of collagen peptides, but also their physiochemical and biological characteristics. Collagen that has been extracted can undergo hydrolysis through either chemical or enzymatic methods. The use of enzymes provides more control over the hydrolysis process due to their specificity, as compared to chemical hydrolysis.
