Addzyme CALB is a food grade preparation of Candida antarctica lipase B produced by submerged fermentation.
The natural function of Addzyme CALB is to act on carboxylic ester bonds hydrolyzing triglycerides into diglycerides, monoglycerides, fatty acids, and glycerol. In addition Addzyme CALB also acts on certain non-natural substrates such as esters. Potential applications in oils & fats industries
for interesterification and transesterification reactions.
Addzyme CALB can also be used for the production of other oil hydrolysis intermediary products such as diacylglycerols (DAG) which has been used as low calorie cooking oil and monoacylglycerols (MAG) which find application as emulsifiers
