FirmSEB
PME 1000L is a pure pectin methylesterase. It increases firmness of fruits
& vegetables by demethylation of endogenous pectin and subsequent chelation
of divalent cations by ionized carboxyl groups on adjacent pectic acids.
FirmSEB PME is especially designed for fruit & vegetable firming applications. The strong pectate network which is created as a result of the combined action of pectin methylesterase and calcium ions, remedies any undesirable effects due to mechanical or thermal processing, the net result is firmer fruit or vegetable pieces. FirmSEB PME can also be used to improve consistency of various fruit & vegetable sauces. It can also used as a clarification aid to produce naturally sweet cider.
