Caseïnate is made by adding sodium or calcium to acid caseïn. This increases the solubility and makes it suitable for specific applications. Varieties such as sodium caseïnate and calcium caseïnate are also availablle. Applications: emulsifier in fat powders, yoghurt and meat (to improve structure) and nutritional function in baby food and sports nutrition.
